What We’re Eating: September 10 – September 15

It’s Monday! Again! That means you made it through last week, good job. I’m proud of you. Now we get to (“get to”? really? fine.) do it all over again!

Hurricane Florence, September 10, 2018

This week is shaping up to be a doozie…not just for us, but for everyone on the East coast that’s in the path of Florence and her wind machine. We were a little concerned about it heading our direction late last week, but the track has tightened up and Florida has been spared. We’re thankful, but we’re also worried about our friends in North and South Carolina who are facing not only a battering ram of wind and rain but some potentially massive flooding events. Please evacuate if necessary, and if you’re sheltering in place, make sure you have plenty of water and food and batteries! 

Surprises in the mail are always welcome!

Here in our neck of the woods, it’s just the boys and me this week while Peter is in Ohio for a work trip. To be honest, I was kind of hoping Florence would head closer to us so I’d have an excuse to pack up the kiddos and drive to Cincinnati to get him and see his sister and brother-in-law. I hear there is an excellent international market not too far from their house, but I guarantee you it’s not the only reason I want to visit them (there have also been rumors of gourmet hot dogs, but until I eat them I cannot confirm or deny their existence).

Since I’ll be single-mom-ing it up until Thursday, dinners will be a bit on the easier side. There’s nothing wrong with that, of course! We’re still going to work to get lots of good veggies in these boys, and as a special treat, we’ll be making some sugar cookies with the mix I got courtesy of Miss Jones Baking Co.!

Monday: Meatless sweet and sour “pork” rice bowls

Tuesday: Zucchini turkey burgers with roasted sweet potato coins and broccoli picnic salad

Wednesday: Tortellini with roasted vegetables and pesto

Thursday: Cornish game hens with roasted Brussels sprouts, butternut squash, and apples

Friday: Cauliflower crust pizzas

Saturday: Family night out! We’re thinking about going to a stargazing event at Hanna Park. Worst case we’ll have plenty of leftovers!

I’ll post up the recipes for these during the week, so check in again soon!
